I used Nile Perch, one of the only two choices of fresh fish I have in Kampala. The other choise is Tilapia. Both from the Lake Victoria waters, thirty minutes away from the city.
The fresh cilantro is from our organic garden at home. Here in Uganda they call it "dhania".
